Pretty much all games contains assets that were never used in actual gameplay. There are many possible reasons. Sometimes they were made early in the development and ended up no longer fitting the creative vision. Sometimes they weren't good enough to be used. Or sometimes they were skipped because the publisher was in a rush to release the game.

As far as I know about Id's process, graphics, music, and sound effects are all created during the design process, things are selected in the code and maps as the game is put together, and after the game is fully functional, nothing else is removed unless it's of benefit to the designers. Some music probably *was* removed from earlier builds of Wolf3D ... only for it to be unearthed again and put in "Blake Stone: Aliens Of Gold". Some of the tunes in the latter game seem quite interchangeable with Wolf3D, such as the music first heard in E1L2 and E2L2.

Well, given how much Bobby Prince loved re-sampling, I am sure that there probably are songs in other games he composed for that started out life as Wolf3D tracks.
